Mamma's Spaghetti, Dad's Grilled Cheese

In Upstate New York recently a group of nostalgic friends started talking about their mother's spaghetti recipes. I hesitated to share about my mom's (even though I knew it was the best) because it was impossible for people who didn't grow up in Oregon to begin to imagine the flavor involved. My mom simply grated her Tillamook medium cheddar loaf over the pasta, added some basil and diced tomatoes with roasted garlic and she was done. Take one bite of this and you know your mamma loves you. Then there was my dad. The poor guy knew how to make exactly two things. cheeseburgers with Tillamook cheddar and toasted cheese with the same. I am far from home now but so blessed to have had two loving parents armed with Tillamook cheese.
