Can you hear the "squeek" sound that a Tillamook Cheese curd makes when you take a bite? The dense protein in the curd causes it to "squeek" on your teeth. As the curd starts aging, the protein breaks down, resulting in smoother, less squeeky cheese. The fresher the squeeky cheese, the more squeeky it will be! Curds are squeeky for about 4-5 days after they are made. For this reason, we only sell them at our Cheese Factory in Tillamook, Oregon.
