Ingredients

1lbs. Tillamook Vintage Extra Sharp White Cheddar

1lbs. Tillamook Pepper Jack

4 large yellow onions

Two boxes of shells and cheese

1lbs. Smoked Sausage

Olive Oil

Fresh Ground Black Pepper

Fresh chopped tomatoes (optional)

Dash of hot sauce (optional)

 

Instructions

PREHEAT OVEN TO 415 DEGREES----Slice onions into 1-2" slices. Slice sausage into bite-sized slices. Grate 1/4lbs. of each cheese, set aside for topping, grate remaining. In large skillet saute onions in Olive oil until nice and brown, takes 15-25minutes on medium heat. When onions are about done, start cooking mac and cheese according to package. When noodles are done, strain and QUICKLY stir in ingredients in this order: Box Cheese, grated cheese, onions, sausage. Stir until well blended. Dump Mac and cheese mixture into a 9x12 pan, spread evenly. Top with remaining Cheese, spread evenly. Place in oven for 20 minutes at 415 degrees. When done, turn on broiler on high and cook for 3-7 minutes or until top in golden brown and crispy. Remove from oven, let cool for 5-10minutes. Top with fresh diced tomatoes and a dash of hot sauce. Serve and enjoy.
